Jaggery is swetener being manufactured from sugar cane without using any hazardous chemicals.

Production Of Non-chemical Jaggery Under Hygeinic Conditions Why Jaggery (Gur) & the Nutritive Value of it:
- We must view Jaggery as a food and medicine as well.
- It is not only a sweetening agent in food and drinks but itself an article of food and is on the dietary of a very large population in all parts of the India.
- Sasruta Sanhita which is supposed to have been compiled about 2500 years ago, states, Jaggery purifies the blood, prevents rheumatic affections and disorders of bile and further possesses nutritive properties of high order. It contains proteins, fats, calciums and phosphorous which are essential constituents of the body.
Disadvantages of Conventional Jaggery Manufacturing Process
The conventional process of Jaggery Manufacture suffers from following disadvantages
- The jaggery produced by the conventional process is considered to be manufactured under un-hygienic conditions.
- The quality of jaggery is relatively inferior. Besides this the keeping quality of the jaggery is also poor.
- Most of the unit operations being batch type and manual, the desired technical efficiency is not achieved and the process is labour intensive.
- As no captive power generation is carried out in absence of boiler and turbine, the cost of diesel in running the DG set to cope up with the power requirement is very high and due to all these factors the cost of conversion is also higher.
- Due to batch type manual operations, the plant size i.e. scale of operation is lower.
- The process is weather dependent and during rains or inclement weather conditions, the plant remains closed.
About The Steam Boiling Process of Jaggery Manufacture
The process eliminates the draw backs of the conventional process and results into better quality jaggery with relatively improved keeping qualities. Due to installation of boiler and turbine, the major cost factor of diesel required for DG set is eliminated and the process can be continued even under adverse climatic conditions.
The process involves juice extraction in hydraulically loaded crushing units but the extraction is maintained around 65-70% only as higher extraction results into more non sugars coming into the juice and affecting the jaggery quality. The juice is filtered and then clarified with the help of vegetable mucilages, synthetic polymers and very small amount of milk of lime in specially designed clarification unit using frothing clarifier by floatation technique. It is then concentrated in Multiple Effect Pressure Evaporators to around 65 deg. Brix using exhaust steam. It is then further concentrated in concentrators using steam/vapours from Evaporators to around 90-92 deg. Brix. It is then cooled and allowed to settle in the moulds. The bagasse (fibrous material) obtained as a result of cane crushing is used as fuel in boilers. Advantages of Steam Boiling Process of Jaggery Manufacture
- The process produces jaggery under hygienic conditions with minimum use of chemicals.
- Use of Sodium Hydro-sulphite is minimized and thus hazardous sulphur content in jaggery remains on lower side.
- The operations being continuous better technical efficiency is achieved.
- Manpower requirement is lower.
- Quality of jaggery is relatively superior in terms of colour, sucrose content and keeping quality.
- Cost of production is lower, particularly, due to captive power generation through turbine.
- The process is independent of weather conditions and can be run during inclement weather also.
